QUALITY AND SUSTAINABILITY: OUR COMMITMENT IN THE VINEYARD.

The pursuit of quality and sustainability begins in the vineyard, with the aim of bringing out the best in each grape variety. This is a significant achievement, which involves treating the vines and the land with the utmost respect throughout the various stages of production. Herbicides, chemical fertilisers and any other products that do not comply with our approach to organic farming are prohibited for the purpose of plant protection. Soil fertility is managed through organic fertilization and the use of 500 preparation.
Harvesting is by hand as is grape selection.

“The less done, the better.”
This is not a statement of laziness. But it is the hope of bringing excellent grapes to the winery every year, so as to interfere as little as possible with the raw material. With few tools at their disposal, but plenty of passion and hard work, they set about working with the earthenware jars. We do not rely on pre-packaged technicalities about the duration of fermentation, maceration and aging: everything is dictated by the particularity of the vintage and our experience gained through years of work.
We strive to maintain the highest quality at every stage, so as to obtain the best wine, an expression of the territory and its specificity.

WINE IN AN AMPHORA. THE HISTORICAL INSPIRATION.

The history of wine and terracotta amphorae did not begin with us. the Greeks, the Romans-and before them, the Caucasians as many as 7,000 years ago-carried and stored wine in these organoleptically “zero-impact” containers that were ideal for slow and constant oxygenation.
We today call upon the wisdom of the ancients to continue our journey of quality and naturalness through a critical, non-nostalgic reinterpretation of traditions. Our amphorae are a means to an end, not an end in themselves; our aim is to offer wines that are, above all, cultural products, the result of a deep attachment to the land.
That is why we chose to have them handmade by a craftsman from Impruneta, the heartland of terracotta craftsmanship in Italy. Each amphora has a capacity of around 800 litres and is fitted with a stainless steel lid to minimise contact with oxygen. Our amphorae, today as in days gone by, are the wise guardians of our wine and our labour.
